Introduction

Hi! My name is Brittany Druker, and I am the founder of The Weekly Mac. I work in advertising as an Art Director, but I moonlight as a macaron baker.

As someone who loves to bake and is also a Francophile, I jumped at the opportunity to take a class at The French Pastry School. I took a "baking enthusiast" level Petits-Fours class which included macarons. I had tried to make macarons once before with a friend, and they tasted amazing, but we had generously deemed them as looking "rustic." This class taught me the Italian method, and I was completely hooked. They turned out beautifully and tasted better than any macs I'd ever tried.

I wanted to keep working on macarons and decided to turn it into a fun side project. This is how The Weekly Mac came to be. I would bake a different flavor every week over the course of a year, and document it all on instagram. I fed my macs to friends, family, and coworkers, and soon enough there was a demand to start selling them.

So now The Weekly Mac is the real deal, and I have been baking away ever since. I've held true to the name, keeping my one-flavor-per-week model. I love that it creates sort of this "once a flavor is gone, it's gone" type of demand.

Because I change flavors each week, I really get to challenge myself to come up with fun and interesting combinations. Some of my favorites have been Cheez-It Nutella, Blackberry Goat Cheese, and Blueberry Crumble. It's honestly hard to pick favorites because they're all so good, but I CAN tell you that Honey BBQ was a bust. Do not try to make Honey BBQ.

I am very excited, and honored, to be teaching this class on Baker Bettie's Better Baking School. I hope you have as much fun with it as I did. Let's do this thing!
